paté

Gourmet food you make yourself and it’s healthy–What?

It’s paté, something you find at fancy French restaurants all over. Pate’ is made from liver, which has a bad reputation. People don’t like its bitter taste, and it contains high amounts of cholesterol, even though eating a food with cholesterol is not likely to raise a person’s cholesterol. But, liver is a nutrient dense food, one of the most nutrient dense foods there is, and it contains more micronutrients (vitamins, minerals, and trace elements) than many fruits! So why aren’t you eating liver? You don’t like the taste? Well, now you can eat liver that tastes good with this easy pate’ recipe. The secret weapon is the apple. The sweetness of the apple cuts the bitterness of the liver. Additionally, the processing will change the texture, which some people can find objectionable.

Paté the Easy Way

Ingredients

  • Chicken liver from one chicken
  • Butter—cut a chunk the same size as the liver
  • Apple—also cut a chunk the same size as the liver (apple can be substituted with pear)
  • Sour cream—scoop the same amount as the liver
  • Sprinkle with chopped green onions
  • Optional: splash of brandy

Directions

Melt butter in a small pan over medium-low heat and sauté green onions and liver until no longer pink, about 8 minutes. In a food processor add all ingredients and mix until very smooth. Put in a crock or jar and refrigerate. Spread on celery or whatever you like and enjoy.
